In the expansive 2,229-square-foot Delray Beach location, guests are welcomed into a vibrant and contemporary setting. The interior boasts a modern twist on Vale’s signature style, featuring earthy tones, sleek furnishings and eye-catching artwork. The 25-seat dining area showcases elegant white and black marble tables highlighted with touches of gold and green, complemented by tropical motifs and comfortable lounge areas. The restaurant extends outdoors with a cozy patio featuring 10 additional seats, perfect for enjoying meals al fresco. True to Vale’s aesthetic, the restaurant is adorned with an array of greenery, succulents, and hanging plants, creating a lush and inviting atmosphere. A hand-painted mural with the mantra ‘Vale: to live an earthly life’ adds a colorful and personal touch to the space.

Vale’s menu offers a diverse selection of health-forward dishes, including açai bowls, poke bowls, and avocado toasts at the cold ‘superfood’ station; build-your-own protein bowls and signature salads at the ‘hot food’ station; and a range of grab-and-go snacks and bakery items, such as freshly baked whole grain chocolate chip cookies. The full beverage program features coffee, matcha, and smoothies. Designed for enjoyment throughout the day, the menu caters to all, including families and kids. Superfood highlights include Smashed Avocado Toast; Chia Pudding; Spicy Tuna Poke Bowl; Açai Smoothie; Dragonfruit Lemonade; and the Vale Matcha Latte.

At the hot food station, guests can create their own protein bowls with a variety of bases, vegetables, proteins, boosts and sauces. Popular proteins include Vale’s turkey spinach feta meatballs, southwest braised beef, and ancho pulled chicken. Signature bowls include: the Sweet Earth Bowl made with sweet potato noodles, roasted broccoli, teriyaki chicken and curry honey mustard; Out of This World Bowl with cilantro lime brown rice, roasted broccoli, ancho pulled chicken topped with chipotle ranch; and the Great South Bowl with chipotle mac and cheese, roasted broccoli and braised beef. Signature salads include: the Buffalo Chicken Salad; The Vale Kale Cobb; and Avocado Greens Salad. All ingredients are locally sourced and the menu rotates seasonally, offering vegan and gluten-free options.

The 2,000-square-foot restaurant has a 27-seat dining room, and guests can settle in at stylish white and black marble tables accented by splashes of gold and green, amidst tropical motifs and inviting lounge spaces. Echoing the design of other Vale locations, the restaurant is adorned with a blend of greenery, succulents, and hanging plants, providing picturesque backdrops while embodying Vale’s dedication to wholesome, sustainable dining. A welcoming outdoor patio features a cozy atmosphere ideal for refueling, working, or simply savoring a meal at any time of the day.

In 2014, Sunny Ilyas embarked on a culinary venture with Vale, initially launching it as a meal delivery service catering to college students. Motivated by strong demand and buzz, he pivoted the brand into a fast-casual restaurant concept. The first Vale Food Co location opened in Tallahassee in 2016, with a mission to offer college students quick, affordable and good-for-you healthy food. In 2022, the brand made its inaugural debut in South Florida in Miami followed by its most recent debut in Boca Raton. Ilyas was recently recognized as one of QSR's Young Restaurant Leaders to Watch. Today, he leads the brand, pioneering new recipes and curating the catering program across all locations.

Founder, Mario Laufer is thrilled to grow the wholesome legacy throughout South Florida. Since 1993, Laufer has been on a mission to create Miami’s healthiest dishes with a flavorful twist.

“Pembroke Pines is one of those incredible developing neighborhoods that we noticed is missing more healthy dining options," said Laufer. “This will be our first location there and excited to introduce the community to our nutritious and well-balanced recipes. With so many families and schools, we think it’s important to introduce nutritious yet, delicious dishes at an early age.”

The new destination occupies 2,072 square feet with 26 seats inside and 24 outdoor seats. The space incorporates the similar inviting and relaxed atmosphere of Carrot Express featuring splashes of orange and green hues throughout the space. Reflecting the cuisine, the decor is fresh and simplistic.

Most recently, Carrot Express launched the following newer menu items:

  • Epic Tuna Melt – served open-face on toasted sourdough bread topped with smashed avocado, albacore white tuna salad, tomato & jack cheese

While we are grateful for coffee for a cause, we asked Turk how Biscayne coffee came to be. He shared, "In the summer of 2020, a massive fish kill took place on the bay due to lack of oxygen in the water. Among the mass of dead fish, I found a dead manatee, while walking with my younger daughter and son along the bay. Angry and saddened by this experience, I thought there had to be something big I could do to help.  The next morning as I was sipping my morning coffee and looking out at the bay the idea struck. Biscayne Coffee was born”, said Turk. “I want my children and all families to experience the magic of Biscayne Bay the way that I did. I hope this coffee inspires and brings awareness to help preserve Biscayne Bay for future generations to enjoy.”

The restaurant presents a simple, healthy, real and modern Mediterranean menu. ICON Mediterranean offers three types of proteins, including chicken shawarma halal, steak shawarma halal, and falafel, styled with four bases such as house samoon, whole wheat tortillas, rice bowls, and salatas. An array of toppings and sauces are also offered, from the ICON signature tahini to the garlic thoam, green tahini, BBQ tahini, spicy tahini, and cucumber yogurt taziki.

Chicken Shawarma Halal

ICON Mediterranean is the only restaurant in Miami to serve Chicken Shawarma Halal and Steak Shawarma Halal. It’s the healthiest category of meat, with the highest quality.

Samoon Bread 

The Samoon Bread, an authentic Iraqi bread, is made fresh daily in-house. It’s similar to pita bread and offers a healthy base that’s mixed with whole wheat flour and white flour with a unique ICON Mediterranean twist. 

Hummus

The Hummus is carefully crafted for three days. On the first day, the chickpeas are soaked. On the second day, they are boiled, washed and set in a cooler. On the final day of prep, the hummus is made. 

Falafel 

The Falafel is made over a two-day prep. The beans are first soaked and then mixed with chopped vegetables and herbs. 

In addition, diners can also experience American-style breakfast plates, including a selection of breakfast bowls and wraps. The restaurant also has a full menu of premium coffees and fresh 100% organic fruit juices, as well as a curated selection of wine and beers. Diners can also try ICON Mediterranean’s specialty dessert, Baklava.

“I’m thrilled to finally introduce Vale Food Co to Miami and offer an all-day restaurant where visitors can enjoy high-quality, healthy food with quick service in one spot,” said Sunny Ilyas, CEO and Founder of Vale Food Co. “I’m confident that our food offerings will be a new elevated option to meet the needs of the fast-paced Brickell market and the lifestyle of our guests who are on-the-go, working or into wellness.”

Ilyas launched Vale in 2014 as a meal delivery service and quickly pivoted the brand into a fast-casual restaurant when he opened the first location in Tallahassee in 2016. In 2017, Vale Gainesville and Tampa opened their doors to the public. The following year, he opened a fourth restaurant in Jacksonville and in 2019, he opened Fort Lauderdale and a second location in Tallahassee. Today, Ilyas manages the brand, recipe development and catering services for all locations.

Vale Food Co attracts locals and visitors alike with its vast array of healthy and high-quality protein, açai and poke bowls accompanied by a full beverage and bakery selection. The Brickell location shares the same design backbone as all other Vale locations but offers a unique Miami flair. The 3,000 square foot restaurant has a 23-seat dining room with plants draped throughout the ceiling to define Vale’s mission to go green and eat green. A colorful hand-painted Vale mural and rotating Miami-inspired artworks are displayed throughout the space. Located outside is the restaurant’s 35-seat patio. The area offers additional relaxed alfresco seating with patio couches beneath white shade umbrellas, coffee tables lining the exterior surrounded by greenery and stringed lights for an elevated dining experience.

Vale Food Co’s menu is divided into a cold “superfood” station and a hot food station along with a selection of grab-and-go snacks and bakery items, popular freshly baked whole grain chocolate chip cookies and a full beverage program including matcha, smoothies and coffee. Superfood menu highlights include: Smashed Avocado Toast; Chia Pudding; Spicy Tuna Poke Bowl; Açai Smoothie and the Dragonfruit Lemonade. New to the menu is the matcha line with KombuMatcha; Vale Matcha Blast; Vale Matcha Latte and Dirty Matcha Latte. The fresh and healthy-forward menu offers a variety of items perfect for year-round weather in Florida.

The hot food station consists of build-your-own protein bowls where guests can customize the bases and add on veggies, proteins, boosts and sauces. Classic and fan-favorite proteins include Vale’s signature turkey spinach feta meatballs, southwest braised beef, ancho pulled chicken among others. Signature hot bowls include the Sweet Earth Bowl made with sweet potato noodles, roasted broccoli, teriyaki chicken and curry honey mustard; Out of This World Bowl with cilantro lime brown rice, roasted broccoli, ancho pulled chicken topped with chipotle ranch; and the Great South Bowl with chipotle mac and cheese, roasted broccoli and braised beef. All ingredients are sourced from local farms and menu items rotate seasonally with a selection of vegan and gluten-free options.
